I made this desert for Valentines Day but it would be great Easter treat. I might make it again but treats are generally taboo in our house, especially ones that use processed foods. But a treat is a treat and that means rules can be broken especially when they taste as good as this and contain coffee. This recipe is really easy and takes almost no time to make. Let me know how yours turns out. If you like it I’ll blog out some more recipes.
About 20 (or more depending on how thick you like your crust) Oreo cookies crushed into fine crumb.
4 TBS melted butter.
Grease a pie pan with butter. Mix crumbs and melted butter in a large bowl. Press mixture into bottom and up sides of pan to make a crust. Set aside in fridge.
2 shots Dark espresso chilled.
250 ml carton whip cream.
4 oz. (1/2 brick) cream cheese at room temp.
½ cup sugar.
3 squares Bakers dark chocolate.
4 Score bars finely chopped (2 for filling and 2 for garnish.)
-In a large bowl beat whip cream until stiff (Tip: chill bowl and beaters first,) refrigerate while you prepare the other ingredients.
-In another bowl beat cream cheese until smooth and creamy.
-Add sugar and beat very well until smooth and creamy so that mixture is not grainy.
-Add cold espresso shots and beat until well combined.
-Add 2/3 of the melted chocolate and beat until well combined. (Tip: melt chocolate in microwave with a TBS of butter for a few seconds for a smoother texture, reserve about a third of mixture for garnish on top of pie.)
-Add 2 crushed Score bars until blended.
-Fold in whip cream with a spatula until mixture is an even colour. Do not overwork the mix.
-Spoon into pie shell. Garnish with 2 chopped up Score bars and drizzle remaining melted chocolate mixture on top.
-Refrigerate pie for at least two hours before diving in.
This recipe serves one unless you have really needy family and friends who insist on sharing.
